How to prepare Palermo cazzilli

Boil the potatoes until they are soft.

Place them in the potato masher with all the peel and mash them in a bowl.

Season with salt, add the parsley and starch.

Make mini oval-shaped croquettes with your hands and put in the fridge.

Fry the cazzilli in boiling oil: it must cover them all.

Advice

For preparation you prefer red potatoes because they have a floury texture that will not cause the croquettes to fall apart during cooking. Alternatively choose the old potatoeswhich still have the right consistency for this preparation.
