How to prepare Parisian flan

Preheat the oven to 170°C.

Grease the mold with butter and put the puff pastry on top. Prick with a fork.

Cook the milk with the whipping cream and the vanilla extract. Bring to a boil.

Beat the whole eggs with the yolks and sugar. Add the cornstarch, stir and gradually add the hot milk.

Transfer the mixture back to the saucepan, passing it through the strainer. Remove to the fire until it thickens.

Pour the cream into the puff pastry and bake for 30 minutes. Let cool for 30-60 minutes and remove the cake from the mold.

Put the cake on a plate, cover it with plastic wrap and leave it in the refrigerator for 12 hours or overnight.
