Yo fried peas they are a tasty and light garnish, excellent to accompany main meat, fish or fried dishes, but also as a base for making a sauce for pasta, rice or other dishes. The ideal is to prepare them in spring, when the peas are fresh and tender, but you can also eat them during the rest of the year, using frozen ones: in the latter case, cooking will be faster.

If you prefer, add bacon or diced ham. Brown them in a pan with the onion before adding the peas.

How to prepare fried peas

Prepare the vegetable broth in advance. Shell the peas and place them in a bowl. Chop the onion and brown it in a pan with the oil over low heat. Add the peas when they are golden and cook for a few minutes over high heat.

Add salt, pepper and broth, which will have to cover the peas. Cook over medium heat, with the lid on, for about a quarter of an hour.

Remove the lid near the end of cooking and stir, allowing the peas to dry out. Season with salt if necessary and serve.

Serve the peas still hot in the pan.

Advice

If you don’t have time, you can prepare the peas in a pan without vegetable broth, just replace with water.

If you want to give it a more consistent flavor, replace the oil with butter: the dose is 10 g per tablespoon of oil.

storage

You can keep the peas in a pan for 1-2 days in the fridge, in an airtight container.
