How to prepare the savory mushroom and béchamel tart

In a bowl, mix the eggs, yolk, salt, sugar, milk, honey and dry brewer’s yeast. 1.

Add the flour and continue stirring until the liquid is absorbed. 2. Let rest for 20 minutes.

Add the butter, knead for 10 minutes until it forms a smooth and compact ball. 3. Let rise for 2 hours.

Roll out the dough with a rolling pin in a circle and place a plate on top 4.

Make cuts around the entire outer edge. Weave the pieces of dough together 5. Then let it rest for 20 minutes.

Prick the center of the tart with a fork and dip the edge with the beaten egg. 6. Bake in a static oven at 180°C for 20 minutes.
