There spelled pasta with vegetables it’s a first easy and nutritious, made with a quick and light seasoning based on pumpkin and broccoli florets. A “dinner saver” recipe, perfect to bring to the table for a lunch espresso or an evening with vegetarian guests, also designed for those who follow a healthy and balanced diet.

Here the pumpkinpeeled and cut into chunks, is browned in a non-stick pan with the broccoli chopped, and sautéed with garlic and oil. The vegetables, cooked but still crunchy, are then partially pureed with the tines of a fork and finally used, with a drizzle of raw oil, to cream the spaghetti, boiled al dente in plenty of lightly salted boiling water. The result will be a satisfying and tasty dish, which can be customized to your liking with the most varied ingredients.

If you wish, you can enrich the mix of vegetables by pouring sautéed mushrooms, diced red beetroot and striped savoy cabbage into the pan or, depending on the season, you can opt for a diced spring and summer vegetables, such as aubergines, carrots, peas, courgettes , peppers… If you like, you can flavor everything with sprigs of thyme you hate rosemary, and then spice the preparation with a pinch of turmeric or saffron. Or, instead of spaghetti, you can choose linguine, vermicelli, mezze sleeves, rigatoni or another pasta shape, long or short, of your liking.

When purchasing we suggest you opt for a pumpkin of the Hokkaido or Delica variety: with sweet and crunchy pulp, and a pleasant chestnut aftertaste, it will win over even the most sceptical.

How to prepare spelled pasta with vegetables

First, clean the broccoli, divide it into florets and rinse it under running water; then peel the pumpkin and cut the pulp into cubes. Transfer the vegetables to a large pan with a drizzle of extra virgin olive oil and the garlic clove 1and let them flavor for about 5 minutes.

Once the time has passed, pour a glass of water, cover with a lid and continue cooking for 15-20 minutes. When the vegetables are soft, partially puree them by crushing them with the tines of a fork 2.

Boil the pasta in plenty of lightly salted boiling water, drain it al dente and transfer it directly into the pan with the sauce 5.

Advice

Good, healthy and with a low glycemic index, spelled pasta is also particularly suitable for diabetics or for those who need to keep their blood sugar levels under control.

Alternatively, you can use a wholemeal one made from khorasan durum wheat, better known by the commercial name of kamut, or you can opt for other “alternative pastas” based on hemp, buckwheatquinoa…

If there are no vegans or vegetarians among the diners, you can enrich the sauce with cubes of bacon and then mix everything with a sprinkling of seasoned pecorino. Or you can flavor the spaghetti with a Bolognese sauce, basil pesto or another sauce of your choice.
