The best known varieties are those of mud and you rock: we suggest that you prefer the latter, which are larger and more valuable, and buy them freshly caught, with a good smell, a bright red color and bright eyes.

How to prepare mullet a la Livorno

Rinse the red mullet under cold running water, cut the belly with a knife 1take out the casings and carefully remove the scales.
