Camaiore Scarpaccia – the salty courgette shoe is a traditional single dish, popular in the province of Lucca – particularly a Camaiore – throughout the area of ​​the Versilia, it’s at Viareggio in a sweet version.

Also called “garden cake“, it is a peasant recipe, prepared in summer with freshly picked small courgettes. Tradition has it that it was brought to the Tuscan bakers, who cooked it using the residual heat of the oven just turned off. The result was a thin cake similar in appearance to a shoe sole, but tasty and crunchy.

Preparing it is simple: cut the courgettes into slices of 1 cm maximum, wait for them to release the water, and mix them with the 00 flour batter, corn flour, water, and starch. Finally, we bake for 30 minutes.

In our recipe, we have not used eggs, which are an entirely optional ingredient.

The salty shoe can be preserved in the fridge for 2-3 days, closed in an airtight container, or covered with cling film. It can be enjoyed both cold and lukewarm, heated for a few seconds in the microwave.
