Camaiore Scarpaccia: the recipe for the savory zucchini pie

Camaiore Scarpaccia

Camaiore Scarpaccia – the salty courgette shoe is a traditional single dish, popular in the province of Lucca – particularly a Camaiore – throughout the area of the Versilia, it’s at Viareggio in a sweet version.

Also called “garden cake“, it is a peasant recipe, prepared in summer with freshly picked small courgettes. Tradition has it that it was brought to the Tuscan bakers, who cooked it using the residual heat of the oven just turned off. The result was a thin cake similar in appearance to a shoe sole, but tasty and crunchy.

Preparing it is simple: cut the courgettes into slices of 1 cm maximum, wait for them to release the water, and mix them with the 00 flour batter, corn flour, water, and starch. Finally, we bake for 30 minutes.

In our recipe, we have not used eggs, which are an entirely optional ingredient.

Now, however, let’s see how to prepare the Camaiore shoe in a savory.

How to prepare the salty courgette shoe

Cut the courgettes and onion into thin slices 1.

Transfer them to a bowl, season with salt and pepper, and cover with a plate. Let it sit for 2 hours to get rid of excess water 2.

Pour the water from the vegetables into a bowl, add the 00 flour and corn flour, and mix 3.

Sprinkle with extra virgin olive oil and mix to get a creamy batter 4.

Pour the batter over the vegetables and mix well 5.

Brush the olive oil into the 12 ” x 11 ” pan and spread the mixture 6.

Use parchment paper to level the quiche mixture well 7.

Add another round of oil and rosemary to the surface 8.

Bake at 190 ° C for 30 minutes and serve: the salty carpaccio is ready to be enjoyed 9.

To prepare the sweet variant viaregginatypical of the city of Viareggio, add 2 eggs, 150 grams of sugar, and a pinch of vanillin: we will obtain an unusual but delicious dessert.

The salty shoe can be preserved in the fridge for 2-3 days, closed in an airtight container, or covered with cling film. It can be enjoyed both cold and lukewarm, heated for a few seconds in the microwave.
