How to make fried potato wedges

Boil the potatoes in water to boil them.

When they have softened, crush them in the strainer to obtain a puree.

Add cornstarch, parsley, Parmesan, salt, and pepper. Knead until you get a smooth and compact ball.

Make smaller balls with the dough. Gently flatten them with your hands and make 6 cuts in each one as shown in the video. Pinch each section to make petals.

In a small bowl, mix the egg with the salt and pepper. Dip the flowers into the egg mixture, then dip into the grits.

Fry them in hot oil until golden on both sides.
