Pour the dried beans into a large bowl, cover with plenty of water and leave them to soak overnight or at least 6 hours. 1

If you prefer a vegetarian version you can omit the bacon.

To speed up the cooking of the beans, use the pressure cooker: they will be ready in about 20 minutes from the whistle.

Remember not to add salt while the beans are cooking, otherwise they will struggle to soften.
