The pasta with bacon, lettuce and tomatoes it’s a very simple first course really rapid to make, perfect for when you have little time to devote to the stove: it is apasta salad to be served cold oa room temperaturewhich you can also prepare in advancevery suitable for when temperatures are particularly high.

The recipe is quick and easy and the only element to cook is the bacon, which must be crunchy, to give a touch of flavor to the dish: but you can turn it into a vegetarian recipe simply by replacing the bacon with some olive and enriching the recipe with chopped almonds, or other dried fruit, so as to give crunchiness with a vegetable element. Furthermore, you can enrich the dish as you like: for example by adding flakes of parmesan, diced cheese, roasted vegetables like zucchini and eggplant, mushrooms or what you have available. For the success of the dish, pay attention to the cooking of the pasta: keep it a little al dente. We used farfalle but any short pasta shape will do. At the end we added a yogurt sauce, which you can buy, make at home, or omit if you prefer.

How to prepare pasta with bacon, lettuce and tomatoes

Put plenty of salted water to heat 1: when it boils, add the pasta and cook it keeping it al dente.

Place the bacon strips in a preheated non-stick pan and cook on both sides 2: the pancetta must be cooked but without overdoing it, to avoid overdrying it. When cooked, chop coarsely.

Drain the pasta well 3 without passing it under water and keep it aside.

Chop the lettuce coarsely 4.

Do the same with the tomatoes 5.

In a large bowl, mix the salad and tomatoes 6adding a drizzle of oil.

Add the pasta 7 and mix well.

Add the bacon, continuing to mix 8.
