He potato pie it’s a second course easy and delicious, perfect for everything family lunch or dine with friends. Tasty and refined, it will seduce young and old. An exquisite and quick traditional dish, consisting of slices of potatoes blanched in water and stuffed in layers with mozzarella, parmesan, cooked ham and milk. A few minutes of cooking in the oven and the result will be a soft cake with a heart and crispy crust on the surface: a temptation that will be impossible to resist, ready to conquer your guests.

It’s a classic empty fridge recipe because you can add your favorite ingredients to the boiled potatoes: other cheeses and cold cuts, but also olives, sun-dried tomatoes and other vegetables, such as zucchini, onions or mushrooms. For a optimal success, we advise you to cut the mozzarella into slices and let them drain slightly in a colander; you can also use scamorza, provola, caciotta or soft cheese that you have available in the fridge.

For a vegetarian variant, you can also omit the cooked ham. For cooking your potato pie, you prefer a ceramic or glass dish suitable for oven cooking and you can sprinkle the surface with more breadcrumbs, to make it even more golden and fragrant. Between the layers, for a pleasant aromatic note, you can add chopped parsley, rosemary or thyme.

How to prepare potato pie

Wash the potatoes, peel them and cut them into slices of about half a centimeter 1.

Put a pan full of water with a little salt on the fire, bring to a boil, pour the potatoes 2 and let them cook for about 5 minutes: they should be slightly soft, but still firm.

Butter a ceramic dish suitable for baking in the oven 3.

Sprinkle generously with breadcrumbs 4.

Once ready, drain the potatoes, dry them with a clean kitchen towel 5 and let them cool.

Place a first layer of potatoes in the pan 6.

Cover with the mozzarella, cut into slices seven.

Sprinkle with grated parmesan 8.

Sprinkle with cooked ham cut into strips 9.

Continue layering until all the ingredients are used up, ending with a layer of potatoes and grated parmesan. Pour the milk over the surface, distributing it evenly ten.

Sprinkle with a few shavings of butter 11 and cook at 200°C for about 20 minutes, or in any case until they are golden brown.

When a crisp, golden crust has formed on the surface, remove the cake from the oven and let it cool slightly 12.
