THE Potatoes in Tecia I am a outline simple and tasty, typical of Friulian cuisine and in particular of the city of Trieste. As for the sautéed vegetables, we used lard and onion but, if you prefer, you can use butter or extra virgin olive oil for a lighter version.

To the stir-fry is added the tight bacon, cut into cubes, which will help make the skillet potatoes delicious and succulent. Once the potatoes have been added, they are moistened with a few ladles of meat or vegetable broth and then continued cooking over high heat until they brown, detach from the sides of the pan and form the characteristic amber crust.

To be served as soon as they are ready and hot, tecia potatoes are perfect in combination with roastsgrilled meats and stews for a Sunday lunch with the family or an exceptional dinner with guests.

How to prepare baked potatoes

Put the potatoes with the well washed skin in a saucepan with cold water 1. Bring to a boil and cook until the potatoes are very tender and can be easily pricked with a fork.

Drain the potatoes and peel them, being careful not to burn yourself. 2.

Others, on the other hand, roughly mash them with a fork 4. Put the potatoes in a bowl and let them cool.

Thinly slice the onion 5.

If you wish, you can mash all the potatoes with a fork during cooking: in this case, the end result will be unpretentious uneven patty and crunchy.

Instead of bacon you can use it grain or cooked ham, for a lighter variant.

Tecia potatoes are excellent eaten freshly prepared or can be stored in the refrigerator in an airtight container for 1-2 days.
