Potatoes en tecia: the tasty recipe for the typical Friulian dish of potatoes and bacon

THE Potatoes in Tecia I am a outline simple and tasty, typical of Friulian cuisine and in particular of the city of Trieste. A very tasty dish that was once prepared by the housewives of Trieste in a blackened iron pan, precisely called “tecia”; this one, after cooking, should not be washed, but only rubbed with paper towel: this was the secret to obtaining golden, crispy potatoes with an irresistible crust.

Today you can use one no frying pan and also obtain an excellent result by always following the traditional recipe. Boil the potatoes whole and with their skins on, peel them then mash them with a fork like a coarse mash. As for the sautéed vegetables, we used lard and onion but, if you prefer, you can use butter or extra virgin olive oil for a lighter version.

To the stir-fry is added the tight bacon, cut into cubes, which will help make the skillet potatoes delicious and succulent. Once the potatoes have been added, they are moistened with a few ladles of meat or vegetable broth and then continued cooking over high heat until they brown, detach from the sides of the pan and form the characteristic amber crust.

To be served as soon as they are ready and hot, tecia potatoes are perfect in combination with roastsgrilled meats and stews for a Sunday lunch with the family or an exceptional dinner with guests.

Find out how to prepare them by following the step-by-step procedure and tips. Also try the stuffed baked potatoes and mashed potatoes.

How to prepare baked potatoes

Put the potatoes with the well washed skin in a saucepan with cold water 1. Bring to a boil and cook until the potatoes are very tender and can be easily pricked with a fork.

Drain the potatoes and peel them, being careful not to burn yourself. 2.

Cut some potatoes into irregular pieces 3.

Others, on the other hand, roughly mash them with a fork 4. Put the potatoes in a bowl and let them cool.

Thinly slice the onion 5.

Cut the bacon into cubes 6.

In a saucepan, place the lard and the onion 7.

Let simmer gently 8.

Add the bacon 9.

Brown the bacon with the sautéed onion and lard until the fat becomes transparent ten.

Add the chopped and mashed potatoes 11.

Add a pinch of salt 12.

Flavor with a peppercorn 13.

Mix with a wooden spatula to flavor the potatoes with the bacon and sautéed vegetables 14. Cook over medium heat, first adding a few ladlefuls of meat broth.

Continue cooking until the potatoes begin to pull away from the sides of the pan, forming an amber crust. 15.

Serve the potatoes immediately 16.

Those who prefer can mix the potatoes with 1/2 glass of White wine to make them even tastier.

If you wish, you can mash all the potatoes with a fork during cooking: in this case, the end result will be unpretentious uneven patty and crunchy.

Instead of bacon you can use it grain or cooked ham, for a lighter variant.

Tecia potatoes are excellent eaten freshly prepared or can be stored in the refrigerator in an airtight container for 1-2 days.
