How to prepare pumpkin cream
Take a pumpkin, open it, remove the peel and cut it into cubes, then peel some potatoes and cut them into cubes too.
Fry an onion sliced into rings, when it is golden add the pumpkin, potatoes, a pinch of salt and add an aromatic bunch.
Cook for a few minutes over high heat and then cover everything with vegetable broth, lowering the heat and cooking for 40 minutes.
In the meantime, prepare some croutons: cut the bread into cubes, place it in a pan and season it with salt, pepper, garlic, herbs, oil and bake at 180°C for 15 minutes.
When the vegetables are well cooked and soft, blend them well and add salt.
The pumpkin cream is ready, serve it with croutons, toasted pumpkin seeds and a drizzle of extra virgin olive oil.
