How to prepare pumpkin pancakes

Grate the pumpkin and place it in a bowl.

Add the parsley, parmesan, 00 flour, salt, pepper, eggs and mix well to combine the ingredients.

Heat a little oil in the pan and pour in the pumpkin mixture with a spoon.

Fry until golden brown on both sides.

Before serving the pancakes, let the oil absorb by dabbing them on kitchen paper.

You can save pumpkin fritters for 1 day in an airtight container, but it would be advisable to eat them immediately after preparation, to enjoy them at their best.
