To bring them to the table, it is enough to mix the eggs with the sifted flour, the oil, the water and a pinch of salt until obtaining a soft dough and free of lumps; After a short rest in the fridge, scoop batter into a lightly oiled nonstick skillet, one ladle at a time and continue cooking, about 2 minutes per side.

You can flavor the dough with cinnamon, vanilla, cardamom, or lemon zest if you like; for savory crêpes, instead, you can perfume with herbs chopped, such as basil, thyme, oregano, or with some spicessuch as turmeric, paprika or sweet curry powder.
