How to prepare salmon in a boat

Start by creating the paper boat, take some sheets of baking paper, fold them on themselves and tie the ends with string.

Then open and widen the center, this way you will get the boat.

Now portion the salmon and make a central cut in the middle of each fillet, so you can open it.

Now make a bed of very thinly cut potatoes in the boat, I advise you to blanch them beforehand, or if you want you can use fennel.

Add the previously cooked spring onions and green beans.

Season with salt, cover with the salmon fillet and brush with the oil emulsion.

Bake at 180°C for 10-15 minutes, it must not overcook otherwise it will become stringy.

Now it is ready to be enjoyed.

You can store the salmon in the boat in the refrigerator for 1-2 days in an airtight container.
