How to prepare the savory brioche braid

In a bowl, mix the flour with dry brewer’s yeast, sugar, milk, egg, olive oil, salt and start mixing to combine the ingredients.

Knead with your hands to obtain a smooth and compact dough. Let rise for 2 hours or until doubled in size.

Divide the dough into three parts. Roll out each part into a long rectangle. Spread speck and cheese in the center. Roll lengthwise to form a strip.

Join the three strips and weave them as shown in the video.

Place the braid on the pan, brush the egg mixture with the milk, cover with the tea towel and leave to rest for 45 minutes.

Bake in a static oven at 190°C for 30 minutes.
