I fried potato squares I am a antipasti crispy and delicious, also great for a aperitif or to serve as outline. To make them, simply boil the potatoes, mash them and mix them with rice flour, starch, salt and pepper. Once the mixture is well compacted, it will have to be spread out, so as to obtain the squares, which will be fried until they are golden brown: the children will also like them very much.

How to prepare fried potato squares

Cut the potatoes into circles in the middle. Boil them in water for 30 minutes. Pass them in cold water and peel them.

Mash potatoes and toss with salt, pepper, rice flour and cornstarch until well blended.

Work the dough to make it compact and divide it into 2 parts. Roll it up and cut it into small pieces. Smash a fork into each piece to create the pattern.

Fry the fries in hot oil until golden brown.

Tips

You can flavor the potato dough with Rosemary or with the aromatic herbs you prefer.

You can save squares of fried potatoes for One dayin an airtight container, but it is advisable to consume them immediately after preparation, to enjoy them at their best.
