The Rainbow Cakeor rainbow cake, is a dessert of American origin that has made a splash on the web, perfect for a special occasion, an anniversary or for the birthdays of the little ones. Scenic and impressive, it will leave guests speechless at the time of cutting. It consists of 6 Dai cake discs different colors, reminiscent of a rainbow, stuffed with a white and voluptuous topping made with mascarpone, creamy spreadable cheese and powdered sugar. The base, on the other hand, prepared with eggs, sugar, yogurt, butter, flour and vanilla extract, is humidsoft and delicately scented.

Only apparently complex, the rainbow cake is actually easy and affordable for everyone: just prepare the basic compound, divide it into 6 different bowls and add a different food coloring to each. The colored doughs are poured into the springform mold, one at a time, and then cooked in a static oven. To speed up this step, you can use 6 disposable aluminum molds. For the final decoration, we have spatula the cake with whipped Cream and garnished the surface with roses and sprinkles of sugar. How to make the rainbow cake

In a bowl, soften the butter 1.

Add the sugar 2.

Work the butter with the sugar until you get a creamy mixture 3.

Then add 1 egg at a time, mixing it each time with the dough 4.

At the end you will have to get a nice homogeneous and smooth cream 5.

Now pour in the yogurt 6.

Perfume with vanilla extract, about 1 tsp 7.

Work the dough well so that it is well blended and there are no lumps 10.

Divide the mixture into 6 parts: each must be about 170 gr; add a tablespoon of dye powder into each and then mix 11.

Butter and flour a mold with a diameter of 16-17 cm 12, pour one colored dough at a time and bake at 170 ° C, in a static oven, for about 18 minutes. Remove from the oven and let each disc cool well on parchment paper.

Prepare the filling by mixing the mascarpone with the cream cheese and the icing sugar 13.

Once all the discs are cooked, place the purple one on a serving dish and make a first layer of filling 14.

Continue with the blue disc 15 and cover with a second layer of cream.
