The courgette rolls with speck and cheese I’m a tasty and summery appetizer: a finger food crunchy on the outside and soft on the inside, made with a filling of cheese and speck and wrapped in two slices of breaded and fried courgettes.

Preparing them is quick and easy: wrap the cheese cube with speck, close with the zucchini, bread and fry until golden brown.

We prefer a stretched curd cheese, such as provolone o to smoked cheesebut it is also possible to make them with the stracchinowhich, however, will simply be spread on the slice of speck.

Perfect for a aperitif in company or to enrich a buffet of whims, this dish can also be fried without breading, just like for fried zucchini rolls. Plus, if we want a version lighter of this appetizer, we opt for the bakingfollowing the steps of the recipe for baked zucchini rolls: in this case, we can also serve it as a light second course.

How to prepare zucchini rolls with speck and cheese

First of all, take two medium courgettes and cut them into very thin slices, using a mandolin or a potato peeler. 1.

Cut the speck slices in half, so that they are the same length and width as the courgettes 2.

Finally, cut the cheese into not too small cubes 3.

At this point, arrange two slices of zucchini on a plane, perpendicular to each other 4.

Wrap the speck around the cheese cube and place it in the center of the two courgette slices 5.

Close the cube with the zucchini and secure the roll with the toothpick 6.

Meanwhile, prepare three different bowls for the breading: one for the flour, the other for the beaten eggs and the last for the breadcrumbs. Season the eggs with salt and pepper, then proceed with the breading of the rolls: first in the flour, then in the eggs and finally in the breadcrumbs 7.

Meanwhile, bring a pan with frying oil to the right temperature and fry the rolls until golden brown 8.

The courgette rolls with speck and cheese are preserved in the fridge per 1 a day at most, closed in an airtight container or covered with cling film. Before serving, we suggest heating them for a few seconds in the microwave. However, we recommend enjoying them freshly fried or lukewarm.
