Prepare the toffee sauce: Pour the sugar and water into a heavy-bottomed saucepan and let it melt over low heat until it starts to boil. 1

If you wish, you can substitute the biscuit base and melted butter for homemade shortcrust pastry: in this case, remember to bake the base plain, without filling, and then fill it only after it has cooled completely.
