How to make hit hat cupcakes
Beat the eggs with the sugar, vanilla extract and mayonnaise.
Combine the flour with the baking powder, salt, bicarbonate of soda and cocoa powder.
Add the dry ingredients to the mixture and mix well.
Pour the coffee a little at a time.
Fill the cupcake molds with the mixture and bake at 165°C for 20-25 minutes.
Pour the meringue onto the cupcakes and leave in the freezer for 20 minutes.
Melt the dark chocolate and coconut oil together.
Dip the cupcakes in the melted chocolate and let it sit to solidify.
You can also add some chocolate chips or pralines on the top.
The cupcakes must be stored under a glass bell jar, in a cool, dry place: in this way they will remain intact for approximately 3 days.
