To make them you will only need one roll of puff pastry, ricotta flavored with lemon zest and sugar. Once the puff pastries have been formed, they will be cooked in the oven for 20 minutes, ready to serve, dusted with icing sugar.

How to prepare puff pastry with lemon ricotta
Mix the ricotta with the lemon zest, vanilla extract and sugar. Get a creamy and homogeneous mixture.
Cut the puff pastry into 6 squares. Cut strips in the middle of each square and then fold them.
Pour a teaspoon of ricotta cream onto each rectangle. Fold two sides towards the center to open the puff pastry.
Transfer them to the baking tray and moisten them with milk. Sprinkle the sugar.
Cook them in a static oven at 190°C for 20 minutes.
Serve the puff pastries decorating them with icing sugar.
You can enrich the ricotta filling with candied fruit, if you prefer. You can also vary the filling as you like, replacing the ricotta with custard or the sweet cream you prefer.
