How to prepare sunflower puff pastry

Start by preparing the pastry cream: Pour the milk and vanilla extract into the saucepan. Let it heat up.

In a bowl, beat the egg yolks, then add the sugar. Stir until dissolved. Add the cornstarch and continue mixing until smooth.

Pour in the milk little by little and mix the ingredients. Transfer everything to the saucepan and stir on the heat until the cream thickens.

Unroll the first circular puff pastry roll and spread the pastry cream.

Cover with the second roll and press lightly with your hands to join the two layers.

Put a glass in the center and make cuts (you will need to get 16 strips). Turn each strip on itself.

Remove the glass and transfer the rustica to the pan covered with baking paper.

Place the cherries in the center of the sunflower and bake at 180°C for 15 minutes.

Sprinkle the icing sugar over the rustic before serving.

You can keep the puff pastry sunflower cake for 2 days under a glass bell.
