It is a variant of the classic meatloaf, which Giusina has wrapped in a crispy and golden crust of puff pastry and served with delicious baked potatoes. The dough will be made with minced meat, breadcrumbs, eggs and pecorino cheese, herbs and filled with baked ham And smoked provola, before covering everything with puff pastry. The meatloaf crust will be cooked in the oven for about an hour, while for potatoes it will take about 15 minutes. This way you will serve a complete and irresistible dish that will win over both adults and children.

How to prepare meatloaf in a crust with potatoes

For the meatloaf: put the minced meat, salt, pepper, egg, pecorino, breadcrumbs soaked in milk, parsley in a bowl and knead with your hands: the mixture should be nice and firm.

Spread the mixture on baking paper, spread it well and fill with ham and smoked provola.

Close the meatloaf, using the baking paper.

Unroll a roll of puff pastry and place the meatloaf in the center.

Make side cuts in the pastry and then close them on the meat roll, as if to form a real covering.

Brush with egg yolk and milk and sprinkle with sesame seeds.

Cook at 180°C in static mode for 45 minutes – 1 hour.

To make the potatoes: peel the potatoes, cut them into chunks and immerse them for about ten minutes in boiling water.

Drain them and let them cool. Mix the potatoes with breadcrumbs and grated cheese and place them on a baking tray lined with baking paper.

Season with flakes of butter and a drizzle of extra virgin olive oil, salt, pepper and rosemary.

Place in the oven at 200°C for 15 minutes and complete cooking by turning on the grill for a few minutes.


You can also fill the meatloaf crust with spinach and scamorza or with the ingredients you have in the fridge.

If there is any leftover, you can store it in the refrigerator for 1 day, covered with cling film.
