For our preparation, we used the Chioggia chicory, a winter vegetable typical of the Veneto region, which is characterized by its rounded head, crunchy texture and sweet but slightly bitter flavor. Here it is cut into wedges, placed on a baking sheet, seasoned with extra virgin olive oil, grated Parmesan cheese, salt and pepper, then baked in the oven until nicely browned in surface.
The result is a tasty dish and very appetizing, which can also be enriched with other ingredients: you can add slivered almonds, walnut kernels and breadcrumbs, to obtain a nice gratin, or even provola, scamorza or asiago diced, for an irresistible spinning effect.
You can also add a drop of balsamic vinegar or a drizzle of honeyed, which goes well with the bitter aftertaste of chicory. If you prefer, you can also choose the Treviso radicchio, with its elongated shape and unmistakable wine color.
