He Radicchio in the oven it’s a outline simple and tasty, ideal to accompany meat or fish dishes, but also fresh and creamy cheeses to complement with a few slices of hot and freshly toasted bread. An easy and inexpensive recipe, excellent for any family lunch or dinner with friends.

For our preparation, we used the Chioggia chicory, a winter vegetable typical of the Veneto region, which is characterized by its rounded head, crunchy texture and sweet but slightly bitter flavor. Here it is cut into wedges, placed on a baking sheet, seasoned with extra virgin olive oil, grated Parmesan cheese, salt and pepper, then baked in the oven until nicely browned in surface.

The result is a tasty dish and very appetizing, which can also be enriched with other ingredients: you can add slivered almonds, walnut kernels and breadcrumbs, to obtain a nice gratin, or even provola, scamorza or asiago diced, for an irresistible spinning effect.

You can also add a drop of balsamic vinegar or a drizzle of honeyed, which goes well with the bitter aftertaste of chicory. If you prefer, you can also choose the Treviso radicchio, with its elongated shape and unmistakable wine color.

How to prepare radicchio in the oven

Cut the radicchio head into several parts 1. To lessen the bitter aftertaste, you can soak it in sour water with vinegar or lemon juice for half an hour.

Wash it well then drain it 2.

Place it on a tea towel to remove excess water 3.

Place the radicchio on a baking sheet lined with parchment paper 4.

Put it so that it does not overlap 5.

Season with a drizzle of oil 6.

Sprinkle with grated parmesan 7.

Season with a pinch of salt 8.

Flavor with a peppercorn 9 and bake in a preheated oven at 180°C for a quarter of an hour.

Remove the chicory from the oven when it is not golden on the surface ten.

Once ready, you can serve it as an accompaniment by adding another drizzle of oil if you wish. 11.


Baked radicchio can be stored for 2 days in the refrigerator, closed in a special airtight container.
