How to make soak cookies
Beat the eggs with the sugar, cornstarch, seed oil and orange extract.
Add the flour a little at a time and mix until a compact dough forms.
Add the baking powder and mix well.
Divide the dough into 2 parts and shape them into oval cookies, flattening them with your hands.
Transfer cookies to baking sheet and make diagonal cuts.
Bake at 180°C for 25-30 minutes.
Dust with icing sugar and fill the cuts with apricot jam.
Advice
If you want, you can add small amounts of cinnamon to the dough, which goes well with the orange extract.

Store the cookies in an airtight container: they will stay soft for about 4 days.
