There spelled soup it is a tasty and easy to prepare starter: a hot, nutritious and light soup, to be consumed during the cold season. In our recipe, we added spelled to greeneryespecially potatoes and carrots, as well as herbs, to make comfort food even tastier. Spelled soup is therefore a healthy and digestible dish, in addition to being a tasty dish: for the preparation, prefer spelled pearl, faster and easier to cook. So here is how to make this simple and tasty recipe, typical of the peasant tradition.

How to make spelled soup

Rinse the pearl spelled well to remove any impurities. Now prepare the sautéed vegetables: put the oil with the carrot, celery and shallot cut into small pieces in an earthenware or steel pan and sauté over medium heat. Meanwhile, cut the tomato and cut it into pieces, finally peel the potatoes and cut them into cubes. Add the potato pieces to the sautéed mixture and cook for 5 minutes, add the tomato and cook for another 2 minutes. Now add the spelled, thyme, rosemary and very hot vegetable stock and bring to the boil. Then lower the heat and cook slowly, uncovered, for about half an hour, stirring occasionally and adding boiling stock as needed. Once ready, leave to stand for a few minutes then serve the hot spelled soup with a drizzle of extra virgin olive oil and a pinch of pepper.

Advice

To make your spelled soup even richer and more nutritious, you can add a few pinto beans. If, on the contrary, you want to give the dish a more pronounced flavor, add a few strips of pancettaraw ham or speck.

Instead of pearl spelled, you can also use pre-cooked spelled where he hulled spelled: in this case, however, you will have to keep it soaked overnight. In addition, cooking times will be extended by approximately one hour.

If you can, use a terracotta stove for cooking spelled soup, as it will keep the taste and aroma of the ingredients used intact.

Which vegetables to combine?

To prepare spelled and vegetable soup, in addition to carrots and potatoes, you can also choose zucchini and spinach, to add to the pan with the other vegetables, or broccoli, which will give the soup a more pronounced flavor, but also rich leeks and chard in fiber, vitamins and minerals.
