There are numerous recipes to do so. pizza, by the slice or on the plate. What we offer you today is the recipe for pizza thousand bubblesa soft and fluffy focaccia, a variant of Fulvio Marino’s focaccia with a thousand bubbles.

The dough is left to rise for a long time, it fills with bubbles and is then cooked and seasoned; our variant is made with tomato, mozzarella and parsley, but you can season it as you prefer. These are the steps to prepare this product with very soft and irresistible yeast that will delight young and old.

How to prepare the thousand bubble pizza

Pour 340 ml of water into a container, then add the fresh brewer’s yeast and sugar. Stir to dissolve the ingredients.

Add the flour and stir with a spoon to absorb the liquid into the dough. Pour in another 100 ml of water, the olive oil, the salt and knead until you obtain a smooth dough without lumps. Cover the bowl with plastic wrap and let the dough rise for 1 hour.

Meanwhile, prepare the tomato sauce: mix the peeled tomatoes, garlic, olive oil and salt. Let stand for 1 hour.

When the dough has risen, fold it with a spoon, bringing the edge closer to the center and let rise for another hour. Repeat the operation and let rise for another 40 minutes.

Line the pan with parchment paper and grease it with oil. Arrange, fold and roll out the dough, then let it rise for 30 minutes.

Pour the sauce over the pizza and press with your fingers to make bubbles. Bake in a static oven at 190°C for 25-30 minutes.

When cooked, add the mozzarella and parsley.

Advice

If you want, you can add some pitted black olives and replace the parsley with the basil.

storage

Store the pizza under a glass bell jar: it will remain soft for approx. Three days.
